Tallow. Stripped back - it comes down to the grass quality.

We asked our beef farmer about the grasses they grow to feed their certified organic grass-fed and finished cattle. Year-round it changes. He provided a long list of the grasses that feature through the seasons of a year. That ignites our imaginations!

Our raw ingredient changes with the cycles of the seasons - with the rain, the sun, the wind. The animals are cyclic as are we – we are cyclic creatures who ebb and flow through the seasons of life.

We are subject to terroir like the cattle who provide us with this incredible ingredient.
The changing nature of the animal articulates with a changing nature of our product.

What a beautiful phenomenon with which to flow.

We will never bend and shape, emulsify or manipulate for uniformity. The essence of the product is the change. The change demonstrates respect of the tallow.

Soil is a huge subject which we look forward to getting "down and dirty" about in future blogs. It's the foundation of life. Our microbiomes are intimately tied up.

For now... we give thanks to the soil and the grass. And the sun and the rain, the wind and the moon and the stars that makes it! All features of the land we share.
